Amura by Ángel León: An immersive marine dining experience at Mount Nelson


MOUNT NELSON, a Belmond Hotel, Cape Town, has announced the launch of Amura by chef Ángel León, opening December 2025. This marks the internationally acclaimed “Chef of the Sea’s” first restaurant outside Spain and his African debut – an immersive marine dining experience inspired by the ocean’s mystery and biodiversity.

Amura celebrates a culinary connection between Andalusia and Africa, where ancient maritime routes once linked Cádiz and the Cape of Good Hope. Drawing on this shared legacy, León blends Spanish culinary traditions with South African ingredients, crafting dishes rooted in responsible gastronomy and ocean conservation.

A three-Michelin-starred chef known for his pioneering use of marine ingredients like phytoplankton and sea rice, León reimagines underused species such as by-catch fish, halophytes and kelp through refined, fire-driven techniques. Diners can choose between a tasting menu or à la carte, celebrating rarely spotlighted ocean treasures and coastal flavours from both continents.

Amura is also a personal homage to León’s father, who inspired his lifelong reverence for the sea. The name, referring to the bow of a boat, reflects forward motion, legacy, and discovery.

The restaurant’s interiors – designed by Tristan du Plessis – pay tribute to Cape Town’s kelp forests, evoking the ocean floor with deep greens, warm timbers, and bronze accents. An open-plan kitchen anchors the space, blending transparency with culinary theatre.

Amura champions local sourcing, sustainability, and marine biodiversity, aligned with Belmond’s ethos. A curated wine cellar will feature rare Cape vintages and Andalusian sherries.

Designed for locals and global travellers alike, Amura invites guests to rediscover the ocean through storytelling, flavour, and purpose.
